This is yummy. I actually have served it to guests who had no idea they were eating a diet treat
1 small to medium boneless chicken breast. Pound thin with meat hammer or rolling pin
layer 1 slice Alpine Lace low fat swiss cheese,
one or two thin slices turkey ham or very lean regular ham lunch meat.
Roll tightly in a roll, then roll the roll in bread crumbs and spray wlth olive oil cooking spray
Place so the edge of the roll is down on the baking sheet and you can secure it with toothpicks if you want
Bake at 350 degrees till lightly browned and juices run clear. About 15-20 min depoending on how thick your chicken roll is.
I got this recipe from an E-diet I was on a few years ago, and it is absolutely delicious. You'd never know you were eating diet food. They recommend the raw chicken breast weigh approx 5 ounces if you are into weighing your portions.
