I first heard of these only recently, and the girl gave me ehr recipe. she said she often has to make it 50 or so people at a time, so was hard to cut it back to a family size portion. But here goes..............

6 medium to largish potatoes, peeled and boiled.............. Mash but do not add anything, no milk, no butter, etc. Just the potatoes........
chop 1 large onion and slice up about 1/4 cabbage finely.
In a pan, melt a tbs butter and fry up the cabbage and onion.
Add the mashed potato to the mix and stir through evenly.
Just before removing to a glass/casserole/oven proof dish quickly stir through a handful of grated cheese.
Place in dish, and put a few dobs of butter on top and bake in oven for 15 to 20 mins to golden the top.

Serve with meat and any other vegie. The rumbledethumps are nice served with most meats in place of normal potato.

I am not a person who can eat sausages and enjoy them, but the night I made this I cooked flavoured sausages and added some gravy to the sausages and just had the rumbledethumps mixture as a side dish and thoroughly enjoyed the whole meal. It made my sausage worth having.
