Ladies..here is my recipe for Cheesy Potatoes...
1 bag Country Hashbrowns (the cubed ones :))
1 8 oz pack of cream cheese
1 16 oz tub of sour cream
1 package mild cheddar cheese (the more the better!!! :))
Preheat the oven to 350 degrees
Mix the cream cheese, sour cream and 1/2 the package of cheese in a large bowl
Microwave the hashbrowns on high for 1 minute (to slightly defrost (makes easier to mix with other ingredients)
Slowly fold the potatoes into the cream cheese/sour cream mixture until well coated
Transfer potato mixture into a deep oven-safe dish cover and bake for 30 minutes or until cheese is slightly melted
Take lid off and bake another 5 minutes until cheese is a golden brown
Let cool for 5 minutes (if you can wait that long!!!)
Serve HOT :) ENJOY :)
